Alright, so my husband is a fan of any dessert but especially a dessert that has fruit in it! So I decided to make some blueberry crumble bars! They were super simple and to quote my husband, “THESE ARE CRAZY GOOD.” Thanks, babe.
- *Makes 6-8 bars*
- For the Blueberry filling you will need :
- 2 cups blueberries (I used frozen)
- 1/4 cup granulated sugar
- 2 tsp cornstarch
- For the Dough and Crumble you will need:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 granulated sugar
- 1/2 cup butter
- 1 egg
- **** So I didn’t put enough of the crumble dough on top so half way through baking I made a quick oatmeal topping***
- 1/4 oats
- 1 tbsp butter
- 2 tbsp brown sugar
- 1/2 tbsp flour
First I mixed my blueberries, sugar and cornstarch then set that aside.
Preheat your oven to 375 degrees and grease your baking dish. I used an 8×8 baking pan.
I then mixed all of my dough ingredients in my kitchen aid and combined that until it was perfectly moist but still a little crumbly.
Take a little more than half of the dough and press that into your baking pan so you have a nice thick crust.
You will then pour your blueberry filling over the top of your crust and then with the left over dough crumble that all over the top!
Now pop that in the oven for 40 -45 minutes or when the top is nice and golden and the blueberries are bubbling!
Let cool completely before cutting into these little chunks of happiness!
**Let’s not forget I added more oatmeal crumble to mine halfway through! Just mix all the oatmeal crumble ingredients and sprinkle all over the top. They should get golden pretty quickly!**
