This recipe is simple, delicious and convenient. During the week my husband and I hardly eat breakfast just because it seems like a hassle in the morning to make something! Clearly, we are not morning people. So the obvious solution was making some breakfast sandwiches ahead of time so we can just grab them as we are running out the door!
- 4 eggs
- 8 pieces of bacon
- can of biscuits (Mine had 8 in the can)
- sliced cheddar (or cheese of your choice)
Such a simple recipe. You only need bacon, cheese, eggs, splash of milk and biscuits. You can use any breakfast meat that you want but we prefer bacon because well bacon is always the right choice let’s be honest.
Start by just crisping up that bacon and throwing the biscuits in the oven! Now try to resist the urge to eat all the bacon while you are cooking everything else but if you happen to eat a piece or 46 don’t stress it, we’re all human.
Now whisk your eggs together with a splash of milk and add some salt and pepper! Whisk it until it is a little foamy on top. Put some butter on the bottom of the pan to coat it and pour just a small amount of the egg into the hot pan. You don’t need a lot because it thins out and you want almost like a crepe like egg.
By now you have everything cooked and it took hardly no time at all! Make an assembly line and start making the sandwiches. Egg, cheese, bacon repeat. For the egg just kind of fold it to fit the biscuit and use 1 piece of bacon per sandwich. Wrap each one in a little bit of tin foil and they are good to go! Keep them in the refrigerator until ready to eat and warm them up in the microwave for about 30 seconds. Obviously take the foil off before you microwave them unless you don’t want your microwave anymore.
