Hey guys!! I know it has been WAY too long since I’ve blogged a recipe. With moving and being in and out of random houses I haven’t felt settled and really cooked in a long time honestly. Cooking for me is such a fun and relaxing thing. My husband and I decided to make dinner together the other night for a little date night and it was so fun. I have missed cooking and can’t wait to get some more yummy recipes out there to y’all!
This recipe is a fun one I made up during our date night. It was relatively quick, easy and oh so delicious!
I didn’t get nearly enough pictures because it was a little tight in the kitchen with my husband and I both cooking but I’ll be sure to describe every step in detail like usual!
- Thin spaghetti
- 2 Eggs
- 2 chicken breasts
- Salt and pepper
- Half and half
- Panko bread crumbs
- Minced garlic
- Olive oil
- Shredded Parmesan
- Shaved Parmesan (optional)
First thing first. Take your chicken breast and pound them till they are pretty thin. Once that’s done but those to the side.
Here is my little breading station! lol first plate is flour, second is 2 whisked eggs and last is my panko bread crumbs with a little salt and pepper and a hand full of shredded parm.
What you’ll do is take one chicken breast at a time and coat it with the flour, then the egg, then the panko mixture and repeat for second breast. Really easy!
**during your prep heat up your water for your pasta! Never forget to salt your water!! Once water is boiling add pasta. When pasta is al dente, drain the pasta and toss in a little olive oil!*
Once your chicken is cooked put that to the side on a paper towel lined plate while you make the sauce.
Here’s where things get tricky for me. I forgot to take pics of the sauce process but it’s not difficult at all!
With the remaining oil and butter from the pan we just used toss in about a tablespoon of minced garlic and cook until fragrant. Garlic seems to burn really quick so keep an eye on it. Then you’ll add about a cup of half and half and 2 more tablespoons of butter and whisk that together on a medium heat setting. I then squeezed fresh lemon juice into the sauce! Feel free to put as much and as little lemon juice in. We always prefer more😊
And now you’re ready to serve! I topped our chicken with some arugula and shaved Parmesan because you can never have enough parm! Drizzle the sauce on top of your chicken and pasta and you’re ready to eat!❤️
