Happy Wednesday everyone! Half way through the week. I’ve spent my fair share of today on Pinterest (YAY for breaks in school!) and I found a recipe I just had to try! Monsoon season here in AZ always has me craving pastas, soups and pot pies. On my search today I found this Pasta recipe from joyfulhealthyeats.com that I needed to try.
My husband and I always love sausage and peppers so I definitely wanted to try this one with Pappardelle pasta. Let’s get started!
Once again I forgot a couple ingredients in the main pic so that’s nothing new lol but they are included in the list below!
- 1 lb. Pappardelle pasta
- 1 Tablespoon olive oil
- 5 sweet Italian sausages
- Half of a Yellow onion
- 2 cloves garlic cloves
- 10 mini sweet bell peppers-Sliced
- 28 oz. Muir Glen crushed fire roasted tomatoes
- Salt and pepper
First heat a skillet over medium heat and put your olive oil in. Once that’s heated up add your sausage and cook until browned on all sides and cooked through. Once that’s done set aside and then slice.
While your sausage is cooking cut up your onion and peppers!
And boil your pasta water! Don’t forget to generously salt your water. Once boiling cook pasta until al dente.
