Hello!! I hope everyone had an amazing Thanksgiving. I had such a great day spent with family and lots of food of course! My sissy was coming in town for the long weekend so I decided I needed to make some cookies for around the house of course! When I think fall and holidays I think pumpkin chocolate chip cookies! Listen, I’m not a big pumpkin fan. Actually now that I think of it this is the only pumpkin thing I will eat. So what I’m saying is it doesn’t matter if you’re a fan of pumpkin or not … you will be sure to love these! Let’s get started.
- 1 cup 100% pumpkin
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 egg
- 1 tsp Vanilla
- 1 tsp baking soda
- 1 tsp milk
- 2 tsp baking powder
- 2 tsp cinnamon
- 2 cups flour
- Pinch of salt
- 2 cup chocolate chips (we love dark chocolate)
First you will mix the pumpkin, oil, sugar, egg & vanilla!
In a different bowl you will combine the milk & baking soda then add that to the pumpkin mix.
In another bowl mix baking powder, cinnamon, salt & flour.
Slowly add that to the pumpkin mixture until it’s all combined.
Now fold in all your chocolate chips!!!
Preheat oven to 350 & let the batter sit for 15 minutes.
Once that’s done bake for 12-13 minutes and enjoy!!!!
