Alright guys, today I am sharing my go to recipe! I love anything Pioneer Woman (Even the baking dish is her brand!) and her pot pie recipe is to die for. Anyone who has ever tried this has absolutely loved it. It’s such a simple and easy recipe that it is a no fail every time.
Now that it’s starting to cool off a little bit ( that’s a lie because it’s still ridiculously hot in Texas) this pot pie will be the perfect dinner to make your family! When it comes to the chicken you can use a rotisserie chicken (I usually get the lemon pepper one from Walmart, gives it so much extra flavor!!), bake and shred your own chicken or use leftover chicken or turkey that you already have.
- 4 Tablespoons butter
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 3 cups shredded chicken
- 1/4 cup flour
- 3 cups chicken broth
- Salt and Pepper to taste
- Thyme to taste
- 1/4 cup Half and Half
- 2 store bought pie crusts (Usually one package contains 2 crusts but double check!)
- 1 whole egg
- 2 Tablespoons water
Alright first two things you will want to do is preheat your oven to 375 and then put your butter into your pot to start melting. Now dice your onion, celery and carrots.
Once your butter is melted in the pot add all of the vegetables and stir them until the onions start to turn translucent.
Usually I buy a rotisserie chicken and just shred that because it’s much easier and it always adds extra flavor but this time I just baked 3 chicken breasts with Salt, Pepper and Lemon Pepper. Now stir the chicken in until it’s warmed up.
Sprinkle the flour over the top and stir until its all combined. Cook that all together for about one minute, then pour in the chicken broth and let that thicken up. That will take a few minutes.
Add in the salt, pepper and thyme to taste. Add the Half and Half and let it get nice and bubbly and thick.
Put your first pie crust into your baking dish then pour all of this deliciousness right on top. Cover with your second pie crust and pinch all of the sides together. Once this is done you will make your egg wash with the 1 egg and 2 tablespoons water and whisk that together.
Brush your egg wash over the entire top of the pie crust. This will make it get all golden and crusty (that’s a word right?)! You’re not going to use all the egg wash so just toss the rest. Make a few little cuts on the top of the crust. Put it in the oven for 25 to 30 minutes. Keep an eye on it because all ovens cook differently.
